
Orecchiette pasta with turnip tops, stracciatella cheese, guanciale bacon and raisin wheat taralli crumble

Orecchiette pasta with broccoli is a simple first course of Apulian cuisine in which orecchiette pasta is topped with sautéed broccoli with oil, anchovies, garlic and chili pepper. A quick and easy recipe that will surprise you.
To prepare Orecchiette with broccoli, we recommend using artisanal Orecchiette (you can find them in our U’ PACK mystery box): their concave shape and rough surface goes perfectly with herbaceous toppings like this one with broccoli! In about 30 minutes you can prepare a dish that will make everyone happy.
Ingredients (for 2 servings)
Total preparation time: about 30 min
- 200 gr orecchiette
- 400 g broccoli
- olive oil
- 1 clove garlic
- salt to taste.
- chili pepper to taste.
- 4 anchovies in oil
Preparation
Clean the broccoli, wash it and blanch it for about 10 minutes in salted water. After blanching them, drain them and keep them aside. Save the broccoli cooking water.
Cut the broccoli into small pieces. Take a frying pan, pour in a drizzle of evo oil and add the garlic* and chili pepper. (*If you do not want to mince the garlic you can “poach” it).
As soon as the garlic starts to sauté, add 2 anchovy fillets in oil and let them melt. Add the chopped broccoli and turn. Add a pinch of salt, add a tiny bit of broccoli cooking water, cover and let the broccoli cook for a couple of minutes.
Cook the orecchiette pasta in the broccoli water, and when it is almost cooked, add it to the pan with the broccoli. Mash the orecchiette, adding cooking water if necessary.
Once finished serve at the table…steaming!
