Orecchiette “Express“ with tomato sauce is a simple, light, inexpensive and tasty first course. They can be prepared at any time of the day, but especially when you are short on time.
The whole thing is prepared in about 20 minutes.
While it is an easy dish to prepare, it is very good, and as is often the case, simple things are always the most appreciated.
Follow the instructions of U’ PACK:
Ingredients (for 2-3 people)
Time: about 20 min
- 250 g Orecchiette
- 2-3 tablespoons Extra virgin olive oil
- 1/4 Onion
- 1 clove Garlic
- 1 chili pepper
- 1 Tomato puree
- q.b. Oregano
- q.b. Salt
- q.b. Parmesan or Pecorino cheese
For Orecchiette “Express“ with tomato sauce put plenty of water on the stove, as soon as it starts to boil add q.b salt and “drop” the orecchiette, stir occasionally and cook the pasta according to the cooking time.
Meanwhile, prepare the tomato sauce where in a frying pan you are going to slightly heat the extra-virgin olive oil, add the onion and garlic that you have chopped, the chopped chili pepper, and sauté moderately. Pour in the tomato sauce, season with salt, add oregano, and cook the sauce slowly for 10 to 15 minutes, adding a little pasta cooking water if needed.
Once the pasta is drained (we like it al dente) pour it into the pan with the sauce, pan-fry and finish cooking.
Small tip: Always leave some of the pasta cooking water aside in case you need it to finish cooking.
Serve Orecchiette “Express” with tomato sauce with some grated parmesan or pecorino cheese to taste.
